Cocoa husk infusion

Enjoy the gourmet flavors of cocoa in a new way! Savor its warm and sweet aromas with this infusion.

I remove the cocoa husks during the winnowing stage, after roasting and before grinding and conching the cocoa nibs.

Preparation tips:

• pour one teaspoon of husks per cup
• add boiling water (95°C) and let steep for 5 to 10 minutes
• for a more gourmet version: you can infuse in milk or other plant-based drink of your choice and add honey
• Enjoy your tasting!
